As you may know, you can set the margin on the pages of your ePUB with:

@page {margin:.5em;}

But in the iBooks app for eBooks on the iPad, the margins are already there.

What is the actual page space available?

In the portrait mode you have a proportional space of 550x800 pixels available for your content.*

In the landscape mode, showing side by side pages, then the space is 370x550 pixels.

These proportions are not the same, so in landscape mode you gain slightly in the vertical dimension.

*The actual pixel measurement may be different on higher resolution later iPad versions.

In 'Full screen mode' you will get slightly more space, and I have noticed that the page space is increased only; not the font size. - see the final image here.
